Banana coconut upside down cake

I kind of tweaked the recipe a bit... Lol

Banana Coconut Upside Down Cake


Ingredients
·        1 yellow cake mix
·        3 whole eggs
·        1/4 cup oil
·        1/2 cup sour cream
·        1/2 cup water
·        4-6 bananas sliced 1/4 inch thick
·        1 1/2 cups shredded coconut
·        1 cup packed brown sugar
·        1/2 cup butter
·        2 Tablespoons lemon juice
·        2 Tbsp. EACH Malibu (coconut rum), Rum, and Banana Liqueur


Directions
1.    Preheat oven to 350 degrees and spray 2 (8 inch) round cake pans with cooking spray.
2.    With an electric mixer, beat cake mix, eggs, oil, water, and sour cream on low until combined. Beat on high for 2 minutes.
3.    Place banana slices evenly on the bottom of the two cake pans.
4.    In a small saucepan melt butter. Add brown sugar and lemon juice and heat until dissolved. Pour half of the brown sugar mixture into each of the 2 round cake pans over the bananas. Sprinkle coconut over brown sugar sauce.
5.    Pour cake batter on top of the coconut into the two pans, dividing equally.
6.    Bake 35-40 minutes or until toothpick in the center comes out clean. Remove from oven and let sit for 5 minutes. 
7.    Sprinkle or brush on 1 tbsp each Malibu, Rum, Banana Liqueur. Allow to soak in.
8.    Invert onto serving dishes. Slice to serve. Sprinkle on 1 tbsp. each liqueur. Allow to soak in. Serve.

Coconut limeade

I believe I have found my summer drink. Yes, I know summer isn't here yet, but I long for it. I can't believe we are still running a heater in March.

I stumbled upon two interesting recipes on Allrecipes.com for Brazilian limeade. One involved cream of coconut, so I had to try it! 

It was really easy and so refreshing! The other recipe involved sweetened condensed milk, and I can't wait to try that one some day... when I run out of cream of coconut! ;) 



For 3 servings, you will need:

2 limes
3 tbsp. cream of coconut
2 cups of water
1 cup of crushed ice
1/2 c. white sugar

First, slice of the ends of your limes and discard. Then slice the limes up thinly.
I heated 1 cup of the water to dissolve the sugar in. Then when it cooled a bit, I placed it in the blender with the rest of the water, the ice and the lime slices, and the cream of coconut. Give that baby a few whirls. Then, strain into a pitcher. Discard all the pulp (it's bitter, you don't want it!). Fill a glass with ice and pour in your new yummy limeade. :)

Toasted Marshmallow Cake - Easy!


So, I found this recipe online tonight, and I just happened to have the ingredients. So why not try it?

1 package Jet-Puff toasted-coconut marshmallows cut in half.
1 box of your favorite chocolate cake mix prepared per package directions. 

Spread marshmallows, cut side down, on the bottom of a non-stick-sprayed (9x13 inch) glass baking dish. Pour batter over the marshmallows and bake per the package directions. The marshmallows will come to the top forming a glaze or frosting!








Yes, I admit for some reason or another there was a cake mix in my pantry. It probably stumbled into the house by accident. I probably got it for next to nothing or free with the purchase of something else. I don’t really remember!

Anyway, long story short. This recipe is easy. However, the glaze I was promised did not appear on my cake. I would have tried to turn it out but it proved impossible.

I thought, “oh well, I will just ice it…” The problem is, I haven’t made a box cake in I don’t know how long. It is much lighter in texture than most cakes I like to deal with. The result was cakeicide… I killed it. It tore up. It’s really ugly, but it tastes pretty good.
 
No, I didn't take a picture of the crime scene. It’s better left forgotten!

You might want to try it. You may have better luck than I did… Then, you can tell me what the heck I did wrong!

Italian Cream Cake

A great go-to cake! I've had this recipe for many years. Everyone loves it. 


Italian Cream Cake:
2 c . sugar
1 stick unsalted butter
1/2 c. Crisco
5 eggs, Separated
2 c. flour
1 c. buttermilk
1 tsp. baking soda
2 c. coconut
1/2 c. chopped pecans (Optional)

Cream butter, sugar, Crisco. Add egg yolks one at a time. Add soda. Add buttermilk alternately with flour. Beat egg whites to stiff peak. Gently fold egg whites into cake batter. Fold in coconut. Place immediately into prepared pans and bake 20-30 min at 350 degrees F.
Yield two 8" or 9" layers.



Frost with Cream Cheese Icing:
8 oz cream cheese
1/2 stick unsalted butter
1 pound powdered sugar 
1 tsp. vanilla
Cream together cream cheese and butter. add in vanilla. Slowly add in powdered sugar.
