Waffle Sunday


I don't think I will ever get tired of waffles, or of trying new waffle recipes. Today, I made a recipe from the Pioneer Woman. I did use buttermilk instead of milk, and unsalted butter, because that's what I stock in my fridge.  
2 cups All-purpose Flour
3 teaspoons Baking Powder
1/2 + 1/8 teaspoon Salt
1/4 cup Sugar
1-1/2 cup Milk
2 whole Egg Yolks
4 teaspoons Vanilla Extract
1 stick (1/2 Cup) unsalted butter, Melted
4 whole Egg Whites, whipped to stiff peaks.

It took my waffles about 4 minutes to cook up nice and crisp. I know why she said serve immediately. After a few minutes. They lost that initial crispness. 


Now, slather on some toppings. How about some leftover ganache?

Chocolate Waffle

Made these today for the family :) yummy


Chocolate Waffle Recipe

1 1/2 cups all-purpose flour
1 Tbsp. baking powder
1/2 teaspoon salt
1/2 cup white sugar
1/4 c. dutch process cocoa powder
1 cup buttermilk
2 eggs
1/2 c. chocolate chips or chunks 

Whisk together flour, baking powder, salt, sugar, cocoa powder. Make a well in the center. Add eggs & buttermilk to the well and combine. Fold in Chocolate chips. Let set 5-10 min. Heat waffle iron. Spray with non-stick cooking spray and add enough batter to fill the cavity.

I served this with cinnamon butter. Enjoy!

Italian Cream Cake

A great go-to cake! I've had this recipe for many years. Everyone loves it. 


Italian Cream Cake:
2 c . sugar
1 stick unsalted butter
1/2 c. Crisco
5 eggs, Separated
2 c. flour
1 c. buttermilk
1 tsp. baking soda
2 c. coconut
1/2 c. chopped pecans (Optional)

Cream butter, sugar, Crisco. Add egg yolks one at a time. Add soda. Add buttermilk alternately with flour. Beat egg whites to stiff peak. Gently fold egg whites into cake batter. Fold in coconut. Place immediately into prepared pans and bake 20-30 min at 350 degrees F.
Yield two 8" or 9" layers.



Frost with Cream Cheese Icing:
8 oz cream cheese
1/2 stick unsalted butter
1 pound powdered sugar 
1 tsp. vanilla
Cream together cream cheese and butter. add in vanilla. Slowly add in powdered sugar.
